Iron Horse Farm barbecue pizza is perfect for quick family dinners or a family night in.
This homemade pizza is finger-licking good, and our barbecue sauce is just like the cherry on top. The best thing about it is that it is easy to make. My son is getting more involved in his school and that leaves little time to prep a full dinner. So, I throw this together when we are in a pinch and need something fun and satisfying.
You can use a homemade dough recipe – we like this Homemade Pizza Crust Recipe from Sally. Just follow the instructions for baking the crust before you top and bake the pizza. If you are in a real hurry, you can just use a frozen or pre-made crust, like the Pillsbury Pizza Dough. If using a frozen crust, don’t thaw the crust before you put it in the oven. Just top it and bake for the recommended time on the package.
Making the Barbecue Pizza
Combine the shredded chicken with 2 Tbsp barbecue sauce. I recommend using the Iron Horse Farm Original barbecue sauce for a really bold, smokey flavor. It pairs so nicely with the red onion. If you prefer a sweeter barbecue sauce with some spice, use the Rassie.
Top your pizza crust with remaining 1/3 cup sauce, leaving 3/4-in. border. Top with mozzarella, red onion and chicken. Bake on a pre-heated pizza stone or baking sheet at 425 for about 20-25 minutes. Top piping-hot pizza with cilantro, cut and serve.
This is a great end to a crazy day that won’t make you crazy!
Variations: You can really top this pizza any way you want. Sometimes we do barbecue Hawaiian pizza. Use ham and pineapple instead of chicken. Or, use pulled pork in place of chicken. Keep everything else the same and serve up a delicious meal for your family!
Barbecue Meatloaf is the perfect recipe for Sunday Dinner on the Farm.
The days are long on the farm and the weeks can stretch into months when we are in the red barn making our sauce. Ingredients, set upon the shelves, are carefully measured into each batch of sauce. We are committed to replicating the delicious flavors our customers are accustomed to each time we lovingly simmer a batch of our barbecue sauce.
We often don’t see one another as the days turn into long nights in the tractor. But the day we all look forward to is Sunday. We give thanks to our Lord for yet another week’s blessings and spend the day together, as a family. So, it goes that Sunday dinner is the BEST! One of our favorite Sunday dinners is our barbecue meatloaf.
Slow Cooking the Barbecue Meatloaf
I combine the hamburger, oatmeal, eggs, milk, salt, green pepper, onion, garlic powder, dry mustard and Worcestershire sauce and press it into a 9×13 in. pan. Then, I top it with 3/4 cup of our Rassie barbecue sauce to provide a sweet, spicy balance to the meat. I grill it on indirect heat at about 200-250 degrees for 2 hours. It is important to use meat that has fat in it – at least 85/15, to ensure that the meat doesn’t get dry during baking. In the last 20 minutes, I top it with the remaining 3/4 cup Rassie barbecue sauce.
The smell is more than any of us can handle! We gather around the table in our kitchen and serve the meatloaf with mashed potatoes and green beans. We share the stories of the week – the ups and downs. But all the cares of the week disappear in the taste and smell of the dinner and drown in laughter of our family. Combine ingredients. Press into 9x13 inch pan. Spread 3/4 cup Iron Horse Farm barbecue sauce of your choice over the top of the loaf. Bake at 375 degrees for 1 1/2 hours. In the last 20 minutes spread the remaining 3/4 barbecue sauce over the entire top of meatloaf.
